💥Client Spotlight: 9lbs down in 10 weeks as a Newly Diagnosed Coeliac!
When this client joined us, it had only been 6 days since her coeliac diagnosis! She was overwhelmed, confused, and unsure what her new lifestyle was even meant to look like. 🫓 Tasty Tuesday: GF Chicken Gyros
This is a really good one when you want something filling and full of flavour, but still easy to put together at home. It’s high in protein and feels a bit different from your usual meals without being complicated. 📊 Per serving: 629 calories | 57g protein | 76g carbs | 11g fat Here’s what you’ll need 🛒: - Chicken breasts (150g) - White potatoes (150g) - Gluten free soft pitta (we use warbuton) - Red onion (100g) - Low fat Greek yogurt (150g) - Cucumber (100g) - Garlic puree (5g) - Gyros seasoning (check it’s gluten free, we used pyrmat from ASDA) Here’s how to make it 🧑‍🍳: 1. Season the potatoes with salt, pepper, and all-purpose seasoning. 2. Spray with 1 cal oil and air fry at 180°C for 20-30 minutes, shaking often, until golden and cooked through. 3. Dice the chicken and add to a bowl. 4. Add the gyros seasoning and a tablespoon of the yogurt. 5. Mix well, then add to skewers with onion. 6. Cook in the oven at 180°C for 15-25 minutes (or until cooked through). 7. Toast the pitta bread. 8. For the tzatziki: mix the remaining yogurt with diced cucumber and garlic puree. 9. Once everything is cooked, assemble in the pitta with chips, chicken, onion, and tzatziki. 10. Optional: squeeze over some lemon juice before serving. Love, Ella 🧡

Are lentils, and dried beans, celiac safe?
It’s been about a month since my celiac diagnosis. There’s lots of info in regards to oats and cross contamination, so I’ve decided to wait at least 6 months before trying to add them back into my diet-absolutely miss eating overnight oats for breakfast🥲. It seems there is the same issue with lentils, but there isn’t as much info to be found. Looking at packages in store isn’t helpful, since most don’t seem to provide processing info. Would love input about this and help finding brands that are safe (located in United States). Same goes for finding safe dried beans. Would washing lentils and dried beans be enough to be able to eat them?
🍿 Tasty Tuesday: Hot Honey Popcorn Chicken!
This has 52g of Protein for only 502 Cals! It only has a few ingredients and is sooo so tasty, which makes it perfect for meal prep to have throughout the week 🧡 Here's what you need 🛒 (4 servings): - 800g chicken breast - 60g gluten-free cornflour - 900g potato - 60g Sriracha - 60g Honey - 1 egg Seasonings: Garlic powder, onion powder, paprika, cayenne, salt, pepper, oregano Here’s how to make it 👩‍🍳: 1. Dice the potatoes, season with 1tsp garlic powder, oregano, paprika, salt, pepper, 1/2tsp cayenne and a bit of cooking spray 2. Mix the potato’s well to fully coat, then oven bake at 200ºC (400ºF) for 30-35 minutes, or air fry at 190ºC (375ºF) for 25-30 minutes. 3. Dice the chicken breast into bite-size pieces and add to a bowl with 1 tsp garlic powder, onion powder, paprika, salt, black pepper, 1/2tsp cayenne and egg. 4. Mix until fully coated, then transfer the chicken to a large container with cornflour and shake well until completely coated. 5. Arrange the chicken on a tray, spray with oil, and bake at 220°C for 15-18 minutes, flipping halfway. For air frying, spray the chicken and cook at 200°C for 10-12 minutes, shaking halfway. 6. Make the hot honey by adding equal parts sriracha and honey to a pan. Bring to a bubble, then reduce the heat and stir until thickened. 7. Toss the cooked popcorn chicken in the hot honey. Divide the chicken and crispy potatoes into four equal portions in meal prep containers, optionally garnishing with chopped chives. Feel free to add any veg of choice to this! Broccoli works great. Just whatever you do, don't drench it in sriracha like I did!! 🫠
