@Carissa Hanson good to know I’m not alone on this! Things with higher flour contents are definitely the hardest! I do have a large bag of gluten free biscotti in my freezer from a friend of mine which I have been eating down and is quite delicious, but I’m really after some good sandwich bread!
Fatigue
Hi everyone!! I’ve really been struggling with the fatigue that comes along with coeliac, usually having to have 2 hour naps every day, struggling to wake up, and to stay awake when I go out. Some days it’s more severe than other days, and I’m currently going through quite an intense patch (just woke up from a 3 hour nap where I was meant to be working….) and I was wondering if anyone had any advice on how to boost energy levels! (Not coffee, my stomach HATES coffee 😣)

I’m right there with you. I’m only working part-time right now because that’s all I have energy for, and still long for a nap by 2 pm! I also cannot do coffee, it does not always sit well with me either. My advice would be focussing on eating higher protein meals, and trying to get some more electrolytes! I know, easier said than done, but any time you can incorporate a little bit more of each is a win, and I find that it does help a bit when I can stick to that!

Those look great! I also love recipes from the loopy whisk. If you’re looking for another muggle (amazing term btw) approved muffin recipe, try this one from meaningful eats! https://meaningfuleats.com/gluten-free-pumpkin-muffins/ The only edit I make to this one is to make 12 muffins instead of 18, they turn out a bit too small otherwise. Also, if you are a fellow chocolate chip lover, definitely sprinkle in some more
Social gatherings
I am feeling a little left out today. We are having a luncheon at work. I did make a lunch to make sure there was a safe option for myself. We were told that dessert would be taken care of. I arrived at work and realize none of the options are GF. I know my celiac is my responsibility. It would be nice to not feel excluded.

Oh I’ve so been there. Work, environments where you don’t know people super well, or groups of people that don’t know anything celiac disease can be tricky! It can definitely feel isolating when you have to eat something different from everyone else (and bring it yourself). It sounds like this would definitely be worth discussing this with your employer, but if you aren’t feeling up to that, that’s okay too! My favourite way to combat these situations is making sure I have food that is wayyyyy more delicious than what everyone else will be eating! Make your favourite food (maybe something that smells really delicious) and make everyone else jealous instead! Another important thing is to surround yourself with people you know will look out for you, and help you make sure there is something for you to eat! If you aren’t comfortable with telling your boss, maybe there is a coworker you could tell who could have you back!
