🍗 Tasty Tuesday High Protein Fajita Chicken & Rice Bowl
If you’re looking for something simple, easy, and genuinely nourishing, this is a great one to add into your week! It’s high in protein, properly filling, and perfect for meal prep or a quick midweek dinner. 📊 Per serving (½ recipe): 437 calories | 42g protein | 34g carbs | 15g fat Here’s what you’ll need 🛒: - Chicken breasts (250g) - Basmati rice (120g) - Onion (60g) - Bell pepper (200g) - Avocado (100g) - Shredded reduced-fat cheddar (30g) - Olive oil (5g) Seasonings: Smoked paprika, cumin, garlic granules, chilli powder, salt and pepper. Lime juice Here’s how to make it 🧑‍🍳: 1. Rinse 120g rice under cold water. Add to a saucepan with roughly 240ml water. Bring to a boil, reduce to a simmer, and cook covered for 10-12 minutes until water is absorbed and rice is tender. Set aside. 2. Heat olive oil in a frying pan over medium-high heat. 3. Add chicken, paprika, cumin, garlic, chilli powder, salt, and pepper. 4. Cook for 8-10 minutes until browned and cooked through. 5. Add sliced peppers and onion. Sauté for 4-5 minutes until just tender. 6. Squeeze in lime juice just before removing from heat. 7. Divide rice between two bowls. 8. Add chicken and veg mix. 9. Top each bowl with 50g avocado and 15g grated reduced-fat cheddar. 10. Garnish with coriander and serve with a lime wedge. Love, Ella 🧡

Hey ladies! Im so excited to share we have our first coeliac wellness webinar for the new community booked for next Wednesday at 8pm UK! For the first one, we will have Dr Bandana joining us - our in-house clinical psychologist at Coeliac Wellness Club! She'll be giving a presentation on how to manage the psychological, social and emotional side of Coeliac Disease. Although so many of us struggle with this side of our lovely little autoimmune condition, this is a topic that really doesn't get spoken about enough! The anxiety around eating out. The frustration. The grief. The feeling misunderstood. It’s real, and it deserves proper space! This is your opportunity to hop on a call with a clinical psychologist with over 20 years of experience to ask any questions you like!
