If you’re looking for a cookie recipe that you can make again and again without fail, I would 100% recommend the Fudgy Brownie Cookie by The Loopy Whisk. https://theloopywhisk.com/2018/07/18/fudgy-chocolate-brownie-cookies-gluten-free/ These cookies are delicious, take under an hour to make, don’t need to be chilled overnight, and will have everyone in disbelief that they are gluten free! These look delicious, there's also a mention of putting peanut butter in the middle 😍 My partner's D&D group have volunteered to try any of my bakes so I don't eat the whole batch 😅

I don't know what I did wrong but mine didn't really turn out as cookies. The mixture was really thick so it didn't spread in the oven. Still delicious though 😋
Social gatherings
I am feeling a little left out today. We are having a luncheon at work. I did make a lunch to make sure there was a safe option for myself. We were told that dessert would be taken care of. I arrived at work and realize none of the options are GF. I know my celiac is my responsibility. It would be nice to not feel excluded.

I totally understand you feeling left out in these situations. My experience of work lunches are quite different. I would prefer to bring my own food and eat only that because 1. I know it's safe, 2. I can count the calories because I'm aiming for a calorie deficit, and 3. I feel bad when my colleagues spend too much money buying gf food for me to eat and I'm the only one who will eat it. I end up taking all of the leftovers home which is too much for me to eat and it gets wasted. I've been to family celebrations where they've bought me a whole separate cake and expect me to eat it all myself. I know this is very kind but when I'm trying to lose weight I don't want the temptation of a whole cake and at the same time I don't want it to go to waste.

I’m 3 weeks into fully GF coeliac mode and still finding my feet, but I’m proud I adapted my first “occassion” food 🤣 A silly little tweak but a step in the right GF direction 🤣 x

Adenomyosis and coeliac disease
Good evening all, Happy Friday! Bit of a weird thing happened today, would be interested to hear your insight please? In the last couple of years I have been diagnosed with coeliac disease and adenomyosis (similar to endometriosis). As a result, I have gained some weight but also suffer with bloating some of the time. A male colleague spoke to me today after his female colleague had asked him if I was pregnant. The way he worded it was quite… blunt, and upsetting but he didn’t mean to cause offence (it really did though!!). Firstly, does anyone else also have adeno? Secondly, what’s everyone’s top tips for not being bloated? I don’t know whether to say something to the female colleague regarding ‘women supporting women’ or explain that my medical conditions cause the bloating. Or even to add that due to the adeno, I may struggle to conceive, so whichever way you look at it, his and her comments were super hurtful. It’s made me cry a couple of times since, and I just feel… glum 😔 Why are people so mean?! Sorry for the long post… xx
