Coeliac disease ignorance
I'm feeling very frustrated. Some of our friends are just not getting the fact that I can never eat gluten again and can't get into their head it's an auto immune disease not an allergy. They have asked us to go for a carvery despite knowing my situation. "Why can't you eat a carvery??" My husband explained " because of the really big risk of cross contamination" It's just not safe" "My wife had gluten problems and she had her gallbladder removed,now she can eat it" I feel like banging my head against the wall seriously. How can I make them understand?

@Mandy Stockwell hopefully Friday the things will be sorted 🙏 I have a meeting with my trade union and the companies trade union. the point is not about me though, even though it’s not been an easy journey since they told me to eat gluten… this came from the new chef… I just wanted you to know that you are not alone, and we have to think of our health first…. I still have friends that care about me and they ask if I am still following a vegan diet!?😣 I think the problem in most people is a real lack of awerness, but please don’t let this weigh you down… People understand in time (My situation at work now is different, as he had been threatening me for a year before, and it was the only thing he could use against me) …. These people are not worth it though, even though I initially went in panick. Don’t think about it now … things get much easier 💕😘xxx Night night, , sending love and hugs to you too 💕😘xxx

This works perfectlyyyy as a sweet high-protein breakfast! It’s sweet, fluffy, packed with protein, and easy to prep in under 20 minutes. A high protein breakfast sets you up for the day and helps a bunch to reduce cravings and snacking through to lunch time! 📊 Per serving (1): 439 calories | 36g protein | 46g carbs | 12g fat Here’s what you’ll need 🛒: - Egg (1 medium) - Greek yoghurt (50g) - Almond milk (100ml) - Vanilla protein powder (1 scoop) - Baking powder (3g) - Honey (5g) - Strawberries (50g, chopped) - FREEE gluten free plain flour (40g) Here’s how to make it 🧑‍🍳: 1. Preheat the oven to 180°C. 2. Mix all batter ingredients together in an oven-safe dish (or blend, then pour into the dish). 3. Sprinkle over the chopped strawberries. 4. Bake for 12–15 minutes, until a skewer comes out clean. 5. Blend ingredients for the ‘icing’ and pour over the top.

Meal prep tip
This isn't a recipe swap as such, but I thought I'd just share something that's really been helping me eat well and feel good 😅 I used to really struggle with lunch. What I mean by this is, I never really knew what to eat but I was always really hungry by lunch time! I have a big family, so I already make a good dinner for everyone and cooking an actual lunchtime meal just is too much - but being gluten free, I always find it harder to have a quick snack. I mean, yes, I make my own gluten free bread and can have sandwiches, but it's somehow not great for me to do that every day. Anyway, here's what I've been doing for the last few months: I meal prep some veg, starch and protein on Sunday, and eat this for my lunch throughout the week. I don't prepare a particular meal as such, but I cook a batch of spinach, a batch of tomatoes, a batch of aubergines, a few pieces of salmon or some chicken, some diced sweet potatoes or a big portion of rice, etc. I don't make the same thing every week, but I just cook what takes my fancy, store it in separate containers and then I mix and match for my lunches. I've found that it really works well. I hope I'm explaining it well and that it helps someone! It's made a big difference to me.

When I cook in the evening, I always make more and then I have some left over for the next meals, I find that saves me time at lunch time xx
