Sweet Potato Brownies
I have been trialing lots of recipes trying to find the perfect gluten free brownie. I found this amazing one on BBC Good Food which is made with sweet potato and quite a lot of healthy ingredients! Are lentils, and dried beans, celiac safe?
It’s been about a month since my celiac diagnosis. There’s lots of info in regards to oats and cross contamination, so I’ve decided to wait at least 6 months before trying to add them back into my diet-absolutely miss eating overnight oats for breakfast🥲. It seems there is the same issue with lentils, but there isn’t as much info to be found. Looking at packages in store isn’t helpful, since most don’t seem to provide processing info. Would love input about this and help finding brands that are safe (located in United States). Same goes for finding safe dried beans. Would washing lentils and dried beans be enough to be able to eat them?

@Krissi Silianova Thank you for your input, it helps. Yes, I’ve prioritized reading labels. It will take me time to learn to recognize the hidden gluten ingredients. I’m trying not to be anxious at the grocery store, it takes so much longer now-although trying not to rely on too many processed foods to help limit exposure.

Coeliac diagnosis
Hi everyone has anyone else been diagnosed but never had a referral for a dietician or to have a bone scan? Just curious.

GI dr said she would refer me to dietitian, if I wanted. I just don’t know how extensive their knowledge of celiac will be. When I go to see general practitioner, I was going to ask about a bone scan. Hoping she’ll agree.
Vaccines
Has anyone else taken the Pneumococcal vaccine? Do you feel this is necessary. Interested in the groups views.

🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS.
