🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. Meal prep tip
This isn't a recipe swap as such, but I thought I'd just share something that's really been helping me eat well and feel good 😅 I used to really struggle with lunch. What I mean by this is, I never really knew what to eat but I was always really hungry by lunch time! I have a big family, so I already make a good dinner for everyone and cooking an actual lunchtime meal just is too much - but being gluten free, I always find it harder to have a quick snack. I mean, yes, I make my own gluten free bread and can have sandwiches, but it's somehow not great for me to do that every day. Anyway, here's what I've been doing for the last few months: I meal prep some veg, starch and protein on Sunday, and eat this for my lunch throughout the week. I don't prepare a particular meal as such, but I cook a batch of spinach, a batch of tomatoes, a batch of aubergines, a few pieces of salmon or some chicken, some diced sweet potatoes or a big portion of rice, etc. I don't make the same thing every week, but I just cook what takes my fancy, store it in separate containers and then I mix and match for my lunches. I've found that it really works well. I hope I'm explaining it well and that it helps someone! It's made a big difference to me.

Hi! I’m from Washington State in the US. It’s been an interesting journey, which started with years of increased platelets, discovering anemia & finally diagnosed with celiac along with a stomach issue that decreases nutrient absorption. I’m the first person known in my family to have celiac & I’ve been dairy free for 10 years. There’s a long healing road ahead& & I hope to learn from this community- how to manage symptoms, properly read labels, improve health with better diet & exercise.
