Meal prep tip
This isn't a recipe swap as such, but I thought I'd just share something that's really been helping me eat well and feel good 😅 I used to really struggle with lunch. What I mean by this is, I never really knew what to eat but I was always really hungry by lunch time! I have a big family, so I already make a good dinner for everyone and cooking an actual lunchtime meal just is too much - but being gluten free, I always find it harder to have a quick snack. I mean, yes, I make my own gluten free bread and can have sandwiches, but it's somehow not great for me to do that every day. Anyway, here's what I've been doing for the last few months: I meal prep some veg, starch and protein on Sunday, and eat this for my lunch throughout the week. I don't prepare a particular meal as such, but I cook a batch of spinach, a batch of tomatoes, a batch of aubergines, a few pieces of salmon or some chicken, some diced sweet potatoes or a big portion of rice, etc. I don't make the same thing every week, but I just cook what takes my fancy, store it in separate containers and then I mix and match for my lunches. I've found that it really works well. I hope I'm explaining it well and that it helps someone! It's made a big difference to me.

@Jenny Kerr such a great idea too! I also try to make extra and freeze - it's so helpful, isn't it?
💯 gluten free hidden heart cake.
I made this for my hubby for valentines 💝. He doesn't need to be gluten free but I wanted to sample a slice 😜. I'm pleased with it. It turned out well & is delicious. It's a Becky Excell recipe if anyone's interested in having a go.

This is so cute! I'd never heard of a hidden heart cake! Something for me to remember for next year's Valentine... or for one of my kids' birthdays 😍
No stomach issues?!
Hiya, this might be a stupid question and super obvious but it’s on my mind 🤣 I’m very early into my GF journey, only a few weeks of strict coeliac for various reasons😬 I was preparing myself for lots of after issues as my gut heals as I’d read people get like a gluten withdrawal and stomach issues as they adjust. My stomach pains & toilet got so bad before I went GF is was really effecting my daily life and making me feel crap. But since I’ve not had one stomach issue. Is that a good sign or is it still to come? 😅 I’m wondering if my stomach is just so happy I’m finally GF that it’s not going to play me up 🤣 x

I reckon that's a great sign! I had zero stomach issues when I went gluten free. On the contrary, I very quickly was free of pain and it was amazing! Super happy for you!!!
🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. I know it's not Tuesday 🤣 But I still titled it Tasty Tuesday so you can find this with the rest of them if you search for the recipes in Skool! Back to regular schedule for recipes next week!

Keto bread!
Hi everyone! I tried out another surprising bread recipe and it turned out really good, so thought I'd share. This is a keto gluten free bread recipe I saw on YouTube (Ela Vegan channel). It basically has zero carbs - which I didn't think was possible for bread! I was doubtful this would work, but it did! You need: - 240g whole golden flaxseeds - 40g psyllium husk powder - 2 tsp baking powder - 4g salt - 320ml hot water And here's how you make it: 1. Pre-heat your oven at 180°C - set it to fan heat 2. Grind the flaxseeds to a fine powder (I used my Thermomix, but I guess the best is to use a spice or coffee grinder) 3. Put the flaxseed powder in a bowl and add the psyllium husk powder, baking powder and salt. 4. Mix 5. Add the water and mix. I had to add about 2 tbsp of water as it was a bit too dry. 6. Form this into a bread and place on a non-stick baking paper 7. Bake for 50 minutes My bread almost tripled in size, it was quite impressive! It tastes really nice. The only thing I'd say is the texture is quite light. I like it but I prefer my usual loaves of gluten free bread that have a bit more "substance", if that makes sense. Anyway, hope this inspires someone! Definitely an easy loaf to make and it's great that it's without carbs.
