Hi ladies! I hope your week is going well and you’re staying warm ❄️ I’ve added new recipes to the classroom for you to explore. Have a look and let us know which ones are going on your to-try list. My personal favourites this month are the Buffalo Chicken and the bright purple soup. And yes, the colour is bold, but don’t let it put you off 😄 If purple isn’t your thing, just swap the heirloom carrots for regular ones and it’ll mellow right out. That soup was actually created at a client’s request as a lighter alternative to a much-loved sausage recipe that was very high in saturated fat. Same comfort, better nutritional balance. Mission accomplished 😍 In the Resources section this month, you’ll also find practical tools to help you get more out of doctor and healthcare appointments. These are tools I’ve used myself and with clients, and they genuinely make a difference. Being organised and having information/questions written down saves time and helps your healthcare team support you more effectively, from investigations to referrals and treatment decisions. Hmmm for some reason I the app keeps closing when I try to add the photo (it wasnt Viv worthy anyway) but we had the buffalo chickens js bean stuffed spaghetti squash and the only silly comment was why it has to go back in the shell 😞 😂 but the rest were "lovely" "actually really good" and "def a make again. I would say very flavourful and filling. Another 🎯
Viral yoghurt bagels (but made Viv style 🥯)
I finally cracked these on my third attempt with zero yoghurt left in the fridge 😄 I started out making bagels, but on round two I switched to rolls… and honestly? I preferred them. Same dough, just a softer consistency. Round three, more rolls with a slightly different dough 😍 Each roll comes in at 219 calories, 7g fibre and 13g protein, which makes them a fantastic base before adding in a filling. Had one for lunch today with: - canned tuna - and my favourite kind of arugula (the type that’s hard to find) 🌿 I’m going to freeze a few tonight to see how they hold up (because freezer-friendly is always a win), and I’ll report back once I’ve tested that properly. 👉 Question for you: Would you like this recipe added this month? If yes, as bagels, rolls, or both?

Caribou Beet & Carrot salad
Has anyone ordered the roasted beet and carrot salad at the Caribou? It has a whipped ricotta and avocado mousse that’s delicious. I had it a few weeks ago and have made my own version of it since. I used theirs as an inspiration from memory of what it includes, and I can’t wait to share it this month in our recipe collection. The ricotta and avocado mousse is layered underneath with a few dollops on top. This takes the salad to a whole new level 😍 I also used blood oranges and they really complimented beet the flavours. They brought a perfect sweetness to the whole dish. With chicken the nutrition is: Calories- 469 Sat fat- 4g Fibre- 12g Protein- 38g Flavour 100/10 😍🤣

I’m always working on new recipes and resources for our lovely community classroom, and I want them to be genuinely useful for real life (not just nice ideas on paper). If there’s something you’d love help with, please drop it in the comments below. This could be: 👩‍🍳 Specific recipes (slow cooker, under-30-minute meals, easy lunches, higher-protein dinners, etc.) 🍲 Ingredient-based ideas (beans, lentils, rotisserie chicken, canned tuna/salmon, frozen veg) 📚 Guides or explainers you want things broken down on (carbs, fats, fibre, labels, blood sugar, cholesterol, supplements) 💕Or a real-life struggle you’re dealing with right now (low energy, cravings, time pressure, cooking fatigue, “what do I even eat?” moments) Nothing is too small or too basic. If you’re thinking it, chances are others are too. I’ll keep this thread pinned and use it as a working list when I’m building new recipes and resources for you 🤍

Personal Update
Skool Friends, I wanted to take a moment to acknowledge that I have not been carrying my commitment to participate regularly as a community member. I am following when I can and appreciate the learnings, recipes, challenges, and community support. Once I get some things sorted through and regain my energy I will be back more consistently.
