Did some ajustments to a recipe I found..
Here's a glutenfree cheesecake with cottage cheese
8-10 servings
4 eggs
50 g polenta flour
1-2 tbsp sugar
1 dl almonds
500 g cottage cheese
1 dl quark, 0,3%fat
2 dl greek yogurt, 2%fat
Some vanilla flavour is nice to add..
Oil to spray the tin/mold/form, with.
Preheat the oven to 175 ⁰C
Chop the almonds finely.
Whisk the eggs, polenta flour and sugar to a smooth batter.
Stir the batter with cottage cheese, greek yogurt and the quark. Add the chopped almonds and stir it together.
Pour the batter into the chosen tin/mold/form.
Bake it in the middle of the oven for around 45-50 mins or to nice color. The cake should rise evenly.
If you take it out and it's much water aat the bottom, it's not ready yet. Put it in again some more minutes.
I had it with blueberries but I usually like strawberries better..
