Cottage cheese pancakes
As I’m figuring out my plan for tomorrow’s breakfast, I’m leaning towards this quick and simple old faithful. 25g protein, 6g fiber (the original recipe has slightly more protein, I just prefer the taste with my tweaks in the parentheses)
  • 1/2 cup (gluten-free) old-fashioned oats
  • 1/2 cup cottage cheese
  • 2 large eggs (I use one egg and 1/2 banana)
  • 1/8 teaspoon kosher salt
  • (1/8 teaspoon cinnamon)
