Settings Weekends

Hi there, I've seen in one of Tom's lessons about processing times for orders over the weekends. I have set the processing time to 1 day as suggested but come the weekend I gather we need to amend this. How do i do this on my Etsy store and do I do it for every single listing or is there I was I can switch it off or change it for all my listings at once? Any help greatly appreciated.
