Food for Thought
Which part of this feels easiest for you right now — planning dinners, because we do this in advanced we do it together as a family (give the 5 year old a say in what we eat too) and which feels hardest - not prioritizing eating breakfast right after my workout which then pushes the meal to 8/9/10am and Im overly hungry.
Something Different
I struggled with nutrition big time! My biggest struggle is that I cook only for me which I find difficult. I also get tired of eating the same thing. So, when I was meal planning for this week, I decided to turn to ChatGPT. So far, it has not failed me with the recipes it provided me. I asked for it to give me 5 recipes that had at least 30 grams of protein. Included fiber. Excluded certain foods I don't like. And it was for 1 person. And it gave me 5 easy dinner recipes requiring very little work and helping me hit my goals. Last night was steak over rice and veggies. Tonight was chicken over quinoa and roasted broccoli. Tomorrow I believe is turkey meatballs with spaghetti and zucchini. It recommended whole wheat, I'm using chickpea pasta....still just as yummy. And Wednesday night, I'll have chicken sausage with farro and broccoli. Again, I'm substituting quinoa for farro. I didn't think I needed to store yet another grain in the house. I forgot I only needed 4 dinners for this week as I head to my parents on Thursday, so I'm not having that last meal it gave me.

Finally got around to adding these recipes into my Plan to Eat database. Love that I can add them to my planner which puts the ingredients right on the shopping list for me. So easy. Great job on these recipes Amanda! Simple ingredients, easy instructions. They’re all winners. On deck for this week: sweet potato & black bean burrito bowls
