Sometimes my wife surprises me, especially considering she doesn't usually beef, but today she asked for it. And here we go...
Beef Tenderloin πŸ₯©:
  • Used 3.5g of salt and dry-brined it on the 291g tenderloin' (it's quite thick!), letting it rest in the fridge for at least an hour.
  • Added a tiny bit of avocado oil on a cold stainless steel pan. Rub it with the tenderloin to "spread" it.
  • Now the magic part... turn on a medium-low fire and let the tenderloin rest there. Flatten it a bit, but LEAVE IT ALONE.
  • When you start seeing a bit of brown emerge at the bottom, move the steak around the pan. You should see more brown, that's the signal to flip.
  • Repeat for a total flip of 2 times per large side, then sear the sides of the tenderloin.
  • Add in some butter for final basting.
  • I swear cold searing works very well on thick steaks.
Veggie Roast πŸ₯•πŸ†:
  • I tossed the carrots and eggplants/brinjal with some avocado oil and salt. Roasted them at 220 deg C for around 25mins? (Was playing by ear)
  • The highlight on this day was the hummus... decided to try making from scratch again
  • 1 can of chickpeas, juice from half a lemon, 3 tablespoons tahini, drizzle of extra virgin olive oil, 1 clove of smashed garlic.
  • Played with my newly-bought Powerpac hand blender! Brrrrr Whirrrrrrr (User review: motor is very silent).
  • Daughter even had some hummus with the carrots, I call that a win.
"Claypot" rice 🍚:
Well, nothing much to say here... I used the spice paste from the Asian Home Gourmet brand. It's kinda on the sweet side, so I may have added a lil' bit of soy sauce and oyster sauce. All in a rice-cooker.
We finished everything! But I learnt something about the hummus today and it sent me on a roller-coaster with the tracking... but never mind, I have already "closed shop", and I shall just assume it has that much fat.
  • Many hummus entries on MFP has a high amount of fat! That contributed to my 876kcal dinner entry.
  • When I searched for a typical chickpea entry on MFP, the fat was high too.
  • The above 2 searches were done with 1 cranky baby and 1 hyperactive-with-tantrums 3yo... so I didn't really scrutinize that much.
  • Today, I found out that the chickpea can I used (Daucy brand) has a lot less fat than the MFP entries, I should have made my own entry, considering I did not use a lot of olive oil too...
  • Guess that means I can try to estimate this evening if I reach home early and before I fetch the 3yo energizer bunny from school πŸ˜†
