(No Protein Powder – Fairlife Elite Version)
🛒 Ingredients
Wet
- 3 ripe bananas, mashed (≈ 330 g)
- 2 large eggs
- ½ cup liquid egg whites (≈ 120 g)
- 1 bottle Fairlife Elite Vanilla Protein Shake (42 G protein 414ml)
- ½ cup plain non-fat Greek yogurt (≈ 120 g)
- ¼ cup unsweetened applesauce
- 1 tsp vanilla extract
Dry
- 1½ cups oat flour (≈ 150 g)
- 1 tsp baking soda
- 1 tsp baking powder
- 1½ tsp cinnamon
- ¼ tsp salt
- ⅓ cup allulose (sweetener of choice)
Fold-ins
- ¾ cup blueberries
- ½ cup raspberries
🔥 Extra Flavor Boost (optional but clutch)
- Optional: ½ tsp lemon zest → berries POP 🍋
👩🏻🍳 Instructions
- Preheat oven to 350°F (175°C). Line or spray a loaf pan.
- In a large bowl, mix all wet ingredients until smooth.
- In another bowl, whisk dry ingredients.
- Gently fold dry into wet until just combined.
- Toss berries with 1 tsp oat flour, then fold into batter.
- Pour into loaf pan.
- Bake 55–65 minutes Tent with foil at ~40 minutes if browning.
- Toothpick should come out with a few moist crumbs.
- Cool 15–20 minutes before slicing.
