🍞 High-Protein Blueberry Raspberry Banana Loaf
(No Protein Powder – Fairlife Elite Version)
🛒 Ingredients
Wet
  • 3 ripe bananas, mashed (≈ 330 g)
  • 2 large eggs
  • ½ cup liquid egg whites (≈ 120 g)
  • 1 bottle Fairlife Elite Vanilla Protein Shake (42 G protein 414ml)
  • ½ cup plain non-fat Greek yogurt (≈ 120 g)
  • ¼ cup unsweetened applesauce
  • 1 tsp vanilla extract
Dry
  • 1½ cups oat flour (≈ 150 g)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1½ tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup allulose (sweetener of choice)
Fold-ins
  • ¾ cup blueberries
  • ½ cup raspberries
🔥 Extra Flavor Boost (optional but clutch)
  • Optional: ½ tsp lemon zest → berries POP 🍋
👩🏻‍🍳 Instructions
  1. Preheat oven to 350°F (175°C). Line or spray a loaf pan.
  2. In a large bowl, mix all wet ingredients until smooth.
  3. In another bowl, whisk dry ingredients.
  4. Gently fold dry into wet until just combined.
  5. Toss berries with 1 tsp oat flour, then fold into batter.
  6. Pour into loaf pan.
  7. Bake 55–65 minutes Tent with foil at ~40 minutes if browning.
  8. Toothpick should come out with a few moist crumbs.
  9. Cool 15–20 minutes before slicing.
