I am trying hard to plan ahead and to prep meals to take to work or for a back up plan. I am more successful when I plan. Today my husband saw my grocery list that was partially started that said chicken and vegetables. He picked some up without asking. He found chicken on sale and bought quite a bit. He then cooked it up for me with different seasonings. Made some veggies to go with it. A simple dinner and lots of left overs that he told me to pack up for meals. I weighted them, packed them, and they went in the freezer. I have attached a picture.
I am thankful that as I am trying to explain to him what I am wanting he will help me when he can. This was a nice surprise when I got home from work. It also allowed me to be more prepared for the rest of the week.
I also find a good trick for me is to put these leftovers or prepared foods in the freezer so they last longer and can rotate more options.
