Ok guys I'm real proud of myself for this one.
Cook chicken breast with taco seasoning and chunky salsa in the crockpot on low for 8hrs. Shred the chicken. Heat the pan on low-medium heat. Spread some butter on the tortilla, place butter side down on the pan. Add cheese, chicken, then more cheese. I also added a little bit of the chipotle sauce in the picture. Add the top tortilla. Flatten with spatula and let cook like that for 2-3 minutes then flip.
I used mission zero net carbs tortillas and reduced fat cheese. I used 1/2 cup of the cheese and 4 ounces of chicken per quesadilla. For my meal, I had salsa and pico de gallo and skipped the sour cream.
