Hello everyone! I'm thrilled to join this group. I wanted to share one of my favorite salads. I have romaine as the base. Then red quinoa, avocado, pecans (I use whatever nut I feel like. Usually pecans or walnuts in this salad), tomato, blueberries and plant based feta.
Red quinoa is a a complete protein. Meaning it contains all 9 essential amino acids that our body cannot make on its own. It also has a higher antioxidant content of all types of quinoa.
