The easiest and yummiest roast chicken you'll ever make
Not our usual type of post - but this meal is seriously so good I just have to share! (FYI If you don't like garlic then this won't be for you.) 40 Clove Garlic Chicken It takes 5 mins to get in the oven, 2 hours to cook and it is absolutely delicious. I throw this in the oven in the afternoon and then I can be present with the kids and play all arvo while it cooks. Pulling it out to sit down to a stress free meal that everyone loves. Place as many gloves of unpeeled garlic as you wish in to the bottom of a big casserole dish. I use two whole bulbs. I've never actually counted to 40 but that is just the name of the recipe in the book I use :) Then place on top pasture raised organic skin on chicken thighs - My pan fits 9 thighs. but I would fill it edge to edge. Pour 1 cup of Chicken or Vegetable stock (bone broth preferred) around the chicken. Sprinkle thyme, sage, salt and pepper generously over the top. Place a little bit of ghee onto each chicken thigh (or olive oil). Cover with foil. Roast on 180 for 1hour 40 Remove the foil turn up the oven to 200 for an extra 20mins. That's it. I serve with sauerkraut, a vege mash, and whatever extra veggies I have in the fridge. Last night our mash was pumpkin, potatoes, leek and carrot. And we roasted extra baby carrots, beetroot and parsnip. Last time we made this we had a cauliflower and pumpkin mash with a side of greens. Sauerkraut always! Barefoot Shoes
G'day All Short time reader, first time poster...just delving into the barefoot material and about to crack on with the recommended audio book. I'm a massive advocate for running around barefoot as to me it's just comfortable, as a heavy diesel mechanic who wears boots for 10 plus hours a day I try to wear as little on my feet as possible when I'm not working. Which coincidentally gets me in trouble with my partner when I traipes dirt into the house or probably more importantly when I'm doing cabinetry work for our renos sans shoes. I found barefoot shoes many years ago when I was working on and around boats in NZ and absolutely loved them but since then I haven't gotten back into them...a few days ago when I ordered a new pair online (here's hoping they fit). Anyway, this actually feels like a bit of a nothing post. I guess I'm just curious as to who if anyone else wears them or has considered wearing them? I do understand that you don't get all the benefits of being completely barefoot but from my experience they do allow you to mould around what ever is under your foot and I can assure you when running or walking through the bush you still have to be careful as sharp objects will still cause you some pain.
