Another "win"šŸ˜‰
I have been "afraid" of soy for YEARS. Being in the health space can be really NOISY- so much controversial information. And when I first started dealing with gut issues, I cut out all the common "offenders": gluten, dairy, soy, sugar, alcohol. Now that I have advanced in my training, and have opened my mind to other ideas and approaches(and have the support here!) I have tried tofu again for the first time in YEARS. I found I digest it really easily and am enjoying having that in my rotation for meal prep again. Thank you Nadia for giving me the confidence to try some of these plant foods I had removed from my diet!

What should I do for my birthday?
My birthday is this Friday and I don't know what I want to do! I'll be celebrating with my family, and I'm thinking of going out to lunch, maybe go to a ceramic painting place, and then dessert at my parents. I love making a big deal out of my birthday but also feel like staying lowkey this year. Also, I wanted to go to this vegan restaurant I've been wanting to try, but I think it would be too "vegan" for my family. šŸ˜‚ So I have no idea where to eat. What do you usually do for your birthday? And help me with my indecisiveness!

Happy Birthday!! Stay offline, sleep in, go somewhere to eat YOU want(regardless of if your family wants to or not), facial/massage/sauna/etc. Those would be on my list!

Could be a show, a delicious plant-based meal, something a family member or a random stranger said, playing with your pets, literally anything.. Let’s share the joy with each other 😊

My coworker is a riot- she is so quick witted she has us laughing every day. Which sometimes is the only thing that gets me through a workday to be honest!
Question: Lentils
What's the secret to making lentils that are NOT mushy?? I am trying to incorporate more lentils but it's a texture thing for me. I bought some green lentils, but they turned out too soft. I would prefer them firmer and "heartier" if that makes sense??? Suggestions? Thank you!

@Nadia Quraishi great, thank you so much!! I soaked them overnight first, would that have contributed to the soft texture??
