My Favorite Way to Sneak More Veggies Into Dinner
I was making lasagna the other day and realized I'd never shared this trick before. I roast whatever veggies need to be used up, toss them with Italian seasoning, and roast at 400 for about 30 minutes. This time it was broccoli, mushrooms, and carrots, but it changes every time based on what's in the fridge. Once they've cooled a little bit, I throw everything into the food processor. What comes out is a perfect veggie mince that folds right into lasagna, or honestly anywhere you want to sneak in some extra plants. Have you tried anything like this? @Amanda Mirrlees how lucky your dad was to have you making nutritious meals like that! I'm sure you did help him feel better and give him a better quality of life โค๏ธ Boost and Ensure are so awful. It's like when doctors will tell my parents to drink Gateorade. ๐Ÿ˜ญ๐Ÿซ

Day 20: Brekkie + Activity + Lunch
Hello! ๐Ÿ™Œ - Daily weigh-in: โ†”๏ธโœ…๏ธ - ๐Ÿ’ฆ already +1600 ml included 3 green teas - Activity: walked +7600 steps so far today - Mood: +++++ energy ++++ - BREAKFAST: Smoothy with oats, broken flaxseed, soy ghurt, 1/2 cup steamed cauliflower, frozen ๐Ÿ“๐Ÿ“๐Ÿ“๐Ÿ“, 1/2 frozen ๐ŸŒ, bit of vegan cream cheese...1 teasoon vanilla stevia...so good...so good ๐Ÿ˜ƒ๐Ÿ˜‹.. - Weather was better โ˜๏ธโ›…๏ธ today...walked to fysio and back, had Christian gathering , drank 2 green teas there, ate 1 small vanilla waffel...someone brought it..(was non vegan but yummy). Walked back homewards. Ate my LUNCH: I MEALPREPPED YESTERDAY= cooked ww pasta + steamed veggies like (spinach + white onion + garlic + green peas.) + 1 small spoon of red pesto (some oil in it). Before I went WFPB I would smother my pasta all over with shredded cheddar cheese and let it melt onto my pasta but NOT THIS TIME! I JUST PUT 10 GR OF HEMP SEEDS ON TOP OF MY PASTA..SO GOOD..SO YUMMY..SO LIGHT! - This big bowl..see photo is for 3 portions hey! - This is a mindshift in my book! A big one! - Waw for myself I feel...hihihi! ๐Ÿ˜Š๐Ÿ˜Š๐Ÿ˜Š๐Ÿ˜Š

@Sophie B it varies, but I love a cashew cheese sauces on pasta. Lentil bolognese is another favorite
Day 20: MEALPREP
Good evening, am resting now in the sofa but did 1,5 hour meal prep: 1. Washed, cleaned, shredded 1 pointed cabbage๐Ÿฅฌ done โœ…๏ธ 2. Made Ami's Breakfast Short cake with ๐Ÿ“๐Ÿ“๐Ÿ“๐Ÿ“ but adaptad it to my needs of course! ๐Ÿ˜œ. I will give the adapted recipe tomorrow morning. Baked it in my favourite ceramic dish in my AF. I made breakfast for 2 days for me. Tomorrow, I reheat 1 part in my microwave inverter.... 3. Made for the 3rd time healthy SNACKS. Normal sliced open dates + pb + dipped into melted 80% vegan chocolate, mixed with some unsweeten soy milk...topped with some salt, frozen for a few hours, thaw few minutes. Munch...everytime so good! Te little bonbons are this way not too heavy just right on the palate...you see? Enjoy!
