First attempt please help
Shells came out a little lopsided.. but my biggest issue is They’re hard, all the way thru Any tips and tricks? Baked 320* f on convection Oven door open for 6minutes then closed door for 16 min Edited to add** I baked on parchment paper which I have never done Could this have contributed to? Thank you for any and all help!

Same thing happened my first time with crystals recipe! Try baking at 295*f That’s what I did differently after a lot of people suggested it and my next batch came out nearly perfect!

Attempt #2 with crystals recipe Definitely better than the first, not overcooked at all. I did 17 minutes at 295*F this time. I think I should’ve air dried them longer than what I did (5minutes) but I’m still way happier with how these ones came out! I did a peach flavor Edit** they came out nearly perfect after maturing for 24hrs! “These are literally amazing” ~ my fiancé

Trying the recipe out and second guessing everything lol is there a video tutorial I can watch just to make sure I am doing it right? Thank you 💕

@Courtney Todd I can never get mine to stiff peaks, literally whipped for 30 minutes and still nothing but I think my problem was I wasn’t whipping the egg whites to peaks before adding the syrup, I was just frothing them pretty well
Over baked?
first time with crystals recipe I thought they looked great, when I did the wiggle test at 17 minutes they weren’t done so left them in 2 minutes more and I think it was too much They’re hard and brittle but I thought looks wise they were great because my last couple tries with another recipe they’d spread and sink 🙃 will they get any better after they mature?

@Daniela Bednarova in crystals recipe pdf it said 320F! The last few I’ve done with a different recipe I’ve done them at 300F
