• 1 crisp apple (Pink Lady or Granny), thin slices
• 1 cup thin sliced napa cabbage or celery
• 2 tbsp fresh dill
• 2 tbsp chopped chives or green onion
Squeeze fresh lemon over apples immediately so they don’t brown.
🥣 Creamy Raw Dressing (Lighter Version)
• ½ cup thick coconut yogurt or blended young coconut meat
• 1 tbsp lemon juice
• 1 tsp apple cider vinegar
• 1 small piece grated ginger
• ½ tsp sea salt
• Optional: 1 soaked date if you want slightly sweeter
Blend until smooth.
Toss everything together gently. Let sit 10–15 minutes so the fennel softens slightly and absorbs the flavor.
