After more than 20 years in hospitality, these are the lessons that stayed with me: 1. Guests remember how you made them feel. 2. The kitchen is your ally, not your enemy. 3. Your next opportunity may be sitting at one of your tables. 4. Consistency beats talent. 5. Respect every position in the restaurant. 6. A bad shift is not a bad career. 7. Never stop learning. 8.
