Baby tomatoes โ roasted and honestly dangerous because I keep eating them straight off the pan ๐ ๐ฅ Zucchini โ washed ๐ซ White beans โ soaking Oh and my garlic tofu ricotta base dip? NAILED IT. Obsessed. ๐ซฃ๐ฟ The fruit counter is STOCKED this week ๐๐๐ Bananas galore. Berries. Melon. And then I went a little wild and grabbed some tamarind AND durian because apparently I love chaos. ๐ If you know durian you know. If you don't โ stay tuned. ๐ This week I am eating raw until 4pm every single day. Fresh fruit, smoothies, salads, always juice. My body just feels better this way โ lighter, cleaner, more energy. By dinner I am ready for something warm and satisfying and honestly the contrast between the two makes both feel even better. ๐ฟ Here's what's coming out of my kitchen this week: ๐ซ Matpe Bean Fritters with Twice Baked Sweet Potatoes โ crispy, filling, and I am SO excited about this one ๐ค Something with white beans โ I don't know what yet but it's going to be amazing.
