This isn't a recipe swap as such, but I thought I'd just share something that's really been helping me eat well and feel good 😅
I used to really struggle with lunch. What I mean by this is, I never really knew what to eat but I was always really hungry by lunch time!
I have a big family, so I already make a good dinner for everyone and cooking an actual lunchtime meal just is too much - but being gluten free, I always find it harder to have a quick snack. I mean, yes, I make my own gluten free bread and can have sandwiches, but it's somehow not great for me to do that every day.
Anyway, here's what I've been doing for the last few months: I meal prep some veg, starch and protein on Sunday, and eat this for my lunch throughout the week.
I don't prepare a particular meal as such, but I cook a batch of spinach, a batch of tomatoes, a batch of aubergines, a few pieces of salmon or some chicken, some diced sweet potatoes or a big portion of rice, etc.
I don't make the same thing every week, but I just cook what takes my fancy, store it in separate containers and then I mix and match for my lunches. I've found that it really works well.
