Inconsistent shape / fullness
First post here! I got an almost perfect batch with all these colors, but when I recreated it the following day, the feet were so tall and it was super frustrating. Some came out tall, while others looked exactly how I like them. Most are full, but when the feet are tall, some end up a bit hollow. I’m trying to figure out how to get consistent, full shells with the right feet height. I’ve noticed that whipping my meringue a bit more than what “stiff peaks” usually look like to me actually helps a lot. I’ve also learned not to mix my batter until I get very thin ribbons, because that almost always gives me hollow shells. Not sure what I’m doing right — or what’s causing the inconsistency 😩 I love when they come out super matte and somewhat rounded at the top. A lot of times they’re pretty full, but look flat at the top.
