Garlic chicken and veggie skillet
Another delicious meal!
The veggies were perfect together. I don’t cook with paprika and decided to give it a shot. It was well worth it. Again I followed the recipe. There was one change I made. Instead of rice I added cauliflower rice. Still used one cup. It was so goooood! I didn’t have white rice but it was still really good.
My takeaway:
Fresh vegetables: tasty and light, can cook them to my liking. I cooked them a little longer than the recipe suggests for a more softer texture. For this dish, a little more crunch would have made it perfect so follow the recipe.
Fresh grated garlic, flavor booster for sure.
Paprika was tasty and very different for me in a good way.
For me, rice can be heavy at dinner time so the cauliflower rice really made it perfect. Just another added vegetable: bonus
I give this a 10++. Healthy, fresh and filling. I am starting to enjoy food out of my comfort zone and this one is on top of the list.
