So, a little involved, but tasty.
I do a cauliflower fried "rice" and have it with oven roasted tofu and broccoli with a sweet and spicy sauce.
I recommend seasoning your veggies with some low sodium soy sauce before adding your eggs...
Also you can sub out the tofu for any protein. Tofu is a good blank canvas. Season it prior to cooking. I have a low calorie teriyaki that works great!
