Etsy Materials Selection in Listings

I've noticed that there are some listings on Etsy which use a category of 'Wall Art' but have Materials listed which are not in the selection Etsy provides. I don't see how this can happen? For example, if I want to put 'Matte Paper' as a material, I am unable to as this isn't part of the options provided and I don't see how to add a new option, if that's even possible. Maybe through a backend API upload? Any ideas?
