Tasty Tuesday Pesto Meatballs
Easy Turkey Pesto Meatballs
High in lean protein, Picky-eater approved, Delicious hot OR cold (perfect for leftovers!)
Here’s how to make them:
* 1 lb ground turkey breast (or chicken)
* 1 egg
* ½ cup panko breadcrumbs
* ½ tsp chili flakes
* ½ cup grated parmesan
* ¼ cup pesto (homemade or store-bought!)
* 2 tbsp chopped fresh basil
Mix, roll into balls, bake at 400°F for 20 mins. Done.
Choose something with plenty of fiber (like whole grain pasta or over some barley, quinoa or rice) to serve with it, and you’ve got a great metabolism-boosting meal in under 30 mins.
