I struggled with nutrition big time! My biggest struggle is that I cook only for me which I find difficult. I also get tired of eating the same thing. So, when I was meal planning for this week, I decided to turn to ChatGPT. So far, it has not failed me with the recipes it provided me. I asked for it to give me 5 recipes that had at least 30 grams of protein. Included fiber. Excluded certain foods I don't like. And it was for 1 person.
And it gave me 5 easy dinner recipes requiring very little work and helping me hit my goals. Last night was steak over rice and veggies. Tonight was chicken over quinoa and roasted broccoli. Tomorrow I believe is turkey meatballs with spaghetti and zucchini. It recommended whole wheat, I'm using chickpea pasta....still just as yummy. And Wednesday night, I'll have chicken sausage with farro and broccoli. Again, I'm substituting quinoa for farro. I didn't think I needed to store yet another grain in the house. I forgot I only needed 4 dinners for this week as I head to my parents on Thursday, so I'm not having that last meal it gave me.
