If you love the flavor of fresh green onions but think you need a full garden bed to grow them, think again! These versatile, easygoing plants are practically made for indoor growing. With just a sunny windowsill, a few everyday items, and a little water, you can have a constant supply of crisp, flavorful green onions right in your kitchen.

Green onions (also called scallions) are one of the simplest crops to regrow. No complicated setup, no special lights, and no garden soil required. They grow fast, take up very little space, and thrive in the same indoor conditions that make you comfortable: warm, bright, and cozy.
Plus, theyโ€™re a cut-and-come-again crop. Meaning you can snip the tops and watch them regrow again and again!

You can start with store-bought green onions:
๐Ÿ. Trim off the green tops, leaving 2โ€“3 inches of the white bulb with roots attached.
๐Ÿ. Place the bulbs upright in a small glass or jar with about an inch of water โ€” just enough to cover the roots.
๐Ÿ‘. Set the glass on a sunny windowsill.
๐Ÿ’. Change the water every few days to keep it fresh.
Within a week, youโ€™ll see new green growth shooting up โ€” and you can start harvesting again in as little as 10โ€“14 days.
๐Ÿ’ก ๐‘ƒ๐‘Ÿ๐‘œ ๐‘‡๐‘–๐‘: Once theyโ€™ve regrown a few times, transplant them into a small pot of soil for even longer life.

If youโ€™d rather start fresh:
๐Ÿ. Fill a small container (4โ€“6 inches deep) with potting mix.
๐Ÿ. Sow seeds about ยฝ inch apart and cover lightly with soil.
๐Ÿ‘. Mist gently to moisten and place in a bright, sunny spot.
๐Ÿ’. Keep the soil evenly damp (not soggy).
Seedlings will appear in about a week. Once they reach 6โ€“8 inches tall, snip what you need โ€” theyโ€™ll regrow from the base!

* Place your jar or pot near a south- or west-facing window.
* Green onions love bright, indirect sunlight โ€” about 6 hours a day.
* Keep them in temperatures between 60โ€“75ยฐF (most homes are perfect).
If your home doesnโ€™t get much winter light, a small LED grow light works wonders.

* For water-grown onions: Change the water every 2โ€“3 days.
* For soil-grown onions: Keep the soil moist but never soggy. Let the top half-inch dry between waterings.
Healthy green onion leaves should stand upright and feel crisp to the touch.

Use scissors to trim the greens about an inch above the white base. Theyโ€™ll regrow several times before slowing down, giving you weeks of fresh flavor for soups, salads, omelets, and stir-fries.
When growth finally fades, compost the old bulbs and start again. Itโ€™s that easy!
