I made this recipe yesterday and baked today. I really messed up by adding ALL of the levain 220 g and not 180🫣 im struggling with bulk fermentation as it is. So I baked her up, and here she is! Gummy. Dense. Sticky. Lol krusty said over proofed due to the amount of levain but I dont recall it collapsing. Anyways, I tried again today and its tucked in fridge. I used 180 grams this time lol any ideas? Too much levain, under over proofed? Here's some photos.
