Hi All, I found out about this petition yesterday. I am aware that not everyone can but if you would like to please sign up. It is asking the government to consider having gluten free food vouchers for coeliacs. I think it would help with the cost of food for a lot of people. 🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. Living with with family who aren’t GF
Hey, me again😅 Anyone who lives with family who aren’t Coeliac/GF? How do you operate? What is separate? Do you share cutlery? Air fryer if using inserts? How do you go to other families houses/ visit friends and eat where you don’t have your GF sanctuary… pans, utensils, plates, trays etc? Last thing… Anyone with Dermatitis Herpetiformis (DH)?😩

I am at uni but in a house share with people who don't eat gluten free and my family at home is also not gluten free so no matter where I go, I am always surrounded lol. At uni i almost find it easier because I am doing all of my own cooking so it is easier to manage. I also wipe sides down before and after eating despite the fact that my house mates are the best for it. I have my own airfryer, own oven trays, own plates, cutlery, chopping boards and everything but only because i already owned it last year. At home on the other had is a different story. My parents are quite hard to talk to about this kind of thing, they arent great with cross contamintation or with allowing me to cook my own food so its a bit of a lose lose. Its hard because they are trying but they never unerstand the severity of it.
Winter sickness
Has anyone have trouble getting sick or really bad sinus infections during winter? I've been trying to take normal vitamins and eating proper. However I've been almost getting sick every week then like a two week break then back again. Wondering if that's just a celiac thing or just something random😅

I have been really struggling with illness too. Colds and infections so i completely understand. It got to the point where when I was diagnosed in September I had a UTI, sinus infection and tonsillitis in the space of a month. It is not fun lol.
Neurodiversity and Coeliac!
Are there any fellow neurospicys? AuDHD, ADHD or ASD? Do you find they impact your ability to cope/function with coeliac? x

Ive got AuDHD and find it so hard to remember to eat drink anyway and since my diagnosis I find i have just been worse. Its like my brain knows that because it is more effort to make food fresh rather than the cheap easy rubbish meals I had at uni last year, i procrastinate more. I also find it harder to advocate for myself because of how overwhelmed and overstimulated I get so trying to explain cross contamination to my parents is near impossible. I wish it didnt effect me as much as it does.

Also just to add to that, I feel that since my diagnosis in September it is all I am able to talk about. I enjoy talking about it with people and finding out more about jt but when making friends at uni I find myself be overly aware of how much I talk about and how it presents me as a person. I think the ADHD is just adding to the overthinking and increasing my rejection sensitive dysmorphia.
