This one started with a question. A member asked if I had a recipe for whole, fresh-milled einkorn, the kind you get from a local organic farmer, not the sifted commercial stuff. She'd tried baking with it and ended up with a dense loaf that dried out by day three. She wasn't doing anything wrong. Einkorn just doesn't behave like modern wheat. So I built one. Sourdough Sandwich Loaf
I’m planning on making a soft sourdough sandwich loaf tomorrow. I would like to add a little bit of whole wheat flour or spelt flour. Which would you choose? Spelt, or whole wheat?

Buying bulk flour
Has anyone ever ordered the 50 pound bag off of Amazon? KA Bread Flour?

A few years ago I was purchasing 25 lb bags of Ardent Mills bread flour under the Sam's Club label. The cost was about $9. When things changed in 2020, I was able to find the same flour, under Ardent Mills' own lable, at a restaurant supply store in 50 lb bags for $26 - $29. My habit is to keep 150 lbs on hand, stored in 5 gallon food grade buckets with gamma lids. To date, I haven't experienced any storage problems. TIP: when buying in bulk, check for a date that tells when the flour was packaged.

Good question @Sandy Chong The flour I mentioned is a bread flour with a protein content around 12.7%. I purchase it specifically for baking sourdough.

Yogurt Whey leftover - Usable in bread making?
I made a homemade yogurt batch yesterday. I strained my yogurt to make it less liquid and more greek style. On the web, it says that it ia an excellent liquid in sourdough bread! What are your toughts or experiences with the whey liquid in bread making?

I've gotten wonderful results and feedback using it in my whole wheat bread. I also use it in my whole wheat starter. I freeze my yogurt whey in ice trays, then melt what's needed for a bake.
