Halfway Through January: Don’t Quit
If you’ve felt your motivation dip, routines wobble, or old habits creep back in….you are not failing, you are normal. The middle of January is where intention meets real life.This is the moment most people give up, not because they can’t do it, but because they expect perfection instead of progress. You don’t need to start over or have to be perfect, you can be present. One small aligned choice today still counts. Pause. Breathe. Recommit gently.Drink more water.Choose one nourishing meal.Take one mindful walk.Release the all-or-nothing mindset. Momentum isn’t built in January 1st energy, it’s built right here. Hey ya'll. I made a Greek Salad last night and wanted to share the general recipe in case anyone wants to make it. It turned out great. Ingredients Dressing: ¼ cup extra-virgin olive oil 3 tablespoons red wine vinegar 1 garlic clove, minced ½ teaspoon dried oregano, more for sprinkling ¼ teaspoon Dijon mustard ¼ teaspoon sea salt Freshly ground black pepper For the salad: 1 English cucumber 1 green bell pepper 2 cups halved cherry tomatoes 5 ounces feta cheese, (I used a vegan feta option) ⅓ cup thinly sliced red onion ⅓ cup pitted Kalamata olives ⅓ cup fresh mint leaves Adjust amounts as desired. Enjoy!!!!

My Homemade Granola Recipe!
Ingredients - 2 cups rolled oats - 2 cups chopped nuts (walnuts, almonds and/or pecans) - 1 tsp cinnamon - 1/4 cup coconut oil - 1/3 cup honey (or maple syrup, if vegan) - 1 tbsp vanilla Instructions: To begin, preheat your oven to 300 and line a baking pan with parchment paper. In a large mixing bowl, add your dry ingredients (oats, nuts, cinnamon) and stir them together. Melt the coconut oil. Add your honey, whisk them together, and microwave them again till they are very warm (about another 30-60 seconds). Add your vanilla and whisk it it. Pour your wet ingredients over your dry ingredients, and stir till all of your oats and nuts are covered entirely. Pour your granola onto your pan and spread it out into one, thin, even layer. Bake in the oven for 25-30 minutes, or till the edges are just starting to gain a bit of color. The granola will get crunchy as it cools. Let granola cool entirely, before breaking it up into pieces. Stored in an airtight container this will last about a few months. Let me know if you try it out!
