Hey ya'll. I made a Greek Salad last night and wanted to share the general recipe in case anyone wants to make it. It turned out great. Ingredients Dressing: ¼ cup extra-virgin olive oil 3 tablespoons red wine vinegar 1 garlic clove, minced ½ teaspoon dried oregano, more for sprinkling ¼ teaspoon Dijon mustard ¼ teaspoon sea salt Freshly ground black pepper For the salad: 1 English cucumber 1 green bell pepper 2 cups halved cherry tomatoes 5 ounces feta cheese, (I used a vegan feta option) ⅓ cup thinly sliced red onion ⅓ cup pitted Kalamata olives ⅓ cup fresh mint leaves Adjust amounts as desired. Enjoy!!!!

That salad looks delicious, I have eaten that feta cheese before it’s good.

A new month, a new theme and this one’s all about your environment. Our external space always mirrors our internal world. When our surroundings are cluttered, our minds often feel scattered too. I worked this weekend, the weather was great for Minnesota and the sun felt great on my skin. I got in at least 6000+ steps each day, the sun gave me so much energy.☀️
Creating an Intentional Morning Routine
Hey ya'll. I've learned over the years that how I start my day is often how I lead my day. I'm getting back to starting my day in a PROACTIVE versus REACTIVE way. Proactive is Self-Priorization by having a morning routine where I connect with me first versus reacting to my day that just started by grabbing my phone and checking in with everyone and everything else first. I'm going to share my morning routine known as S.A.V.E.R.S. over the next few days if you need support in creating a morning routine that will align with you.
