Some varietals can be better suited for different purposes. For example, the heirloom tomato, with its beautifully varied hues are better suited for salads, such as a caprese, or lightly cooked in the case of a panini, or a pizza, or tarts. While the Roma tomato, with a slightly thicker skin, lower water content, and typically mild tomato flavor lends itself more to stews, soups, and salsas.
