What can I do with Parsnips
Hi, I’m Valeria. I’m originally from Colombia and I’ve been living in Maine for the past 4 years. I’d love to learn more about how to use parsnips, and how to cook with seasonal ingredients. Thanks!

Hello Valeria! Thank you for joining! And from my native Colombia too! Represent! Parsnips are an amazing root vegetable that has a lot of uses. They can be peeled, diced and roasted with seasonings like garam masala, or even as basic as just salt and pepper for an awesome roasted root vegetable. They can be cooked with shallot, butter and salt and pureed once soft to make a parsnip puree that can be a great component to beef or scallop dishes. They can also be made into Parsnip and Potato Mashed for an increased nutritional starch, with an earthy and slightly sweet undertone. You can slice them thin and fry them for parsnip chips, like plantains! It can be an be an amazing vegetable side, and this isn’t even scratching the surface. Parsnip apple soup is a good one too.

Here is a quick recipe for Parsnip Apple Soup that is a good starting point for working with parsnips! - 2 garlic cloves, peeled and finely chopped - 2 sprigs rosemary, leaves picked off and finely chopped - 2 tablespoons olive oil - 1 onion, peeled and roughly chopped - 750 g parsnips, peeled and roughly chopped - 1 apple, peeled, cored and roughly chopped Put the chopped garlic and rosemary into a small bowl with the olive oil and set aside for 10 minutes to infuse. Heat a pot on medium-low heat and add the infused oil to the pot along with the onion, parsnips and apple and fry for 10 minutes. Pour in 1.2 litres of boiling water, chuck in the crumbled stock cubes and bring to the boil. Turn down the heat and simmer for 20 minutes. Blend the soup until smooth and season well to taste. - 2 stock cubes - salt and freshly ground black pepper

Alright, let’s do it! Let’s talk about tomatoes…or tomatoes (iykyk) depending on where youre from. Coming in different varietals and sizes there is next to no limit of what can be done with this versatile fruit. Yes it is a fruit! Fun fact Number 1! Right off the bat! While tomato is botanically a fruit, it is classified by the USDA as a vegetable for nutritional values and for trade internationally. Alright, so what can we do with tomatoes? Some varietals can be better suited for different purposes. For example, the heirloom tomato, with its beautifully varied hues are better suited for salads, such as a caprese, or lightly cooked in the case of a panini, or a pizza, or tarts. While the Roma tomato, with a slightly thicker skin, lower water content, and typically mild tomato flavor lends itself more to stews, soups, and salsas.
