🌎 Hidden Classic — Paloma
Everyone knows the Margarita. But the drink Mexico actually orders? The Paloma. Tequila • Lime • Grapefruit soda • a pinch of salt 👉 Built, not shaken 👉 The salt goes in the LIQUID, not just the rim — it kills bitterness and lifts the fruit That pinch of salt is the whole lesson: seasoning isn't just for food. Salt in the drink — genius or heresy? 🧂

🍸 Classic Cocktail of the Day #2 — Daiquiri
The purest sour there is. Rum, lime, sugar — no blender, no umbrella. 1️⃣ 45ml White rum 2️⃣ 25ml Fresh lime juice 3️⃣ 15ml Simple syrup 👉 Shake hard until the tin frosts over. 👉 Double-strain into a chilled coupe. 👉 Fresh lime ONLY — bottled kills it. Nail this 45/25/15 balance and you can build a Margarita, a Whiskey Sour, a Sidecar. It's the backbone of the whole canon. Daiquiri too tart or too sweet for you — how do you tweak yours?
