Thought I'd post this before the site closes.
What a lovely twist to noodles.
12 x large shrimps, 2 x cloves of garlic(crushed), 2 x tbsp olive oil, red chilli flakes.
1/2 tin of chopped tomatoes
Zucchini are courgettes, which were spiralized.
Chopped parsley added as a garnish.
You can add extra chilli's for extra heat if you wish.
I've requested this meal again.
Lovely, light, refreshing and very filling.
Since starting this "lifestyle change" I've never eaten such enjoyable meals and not feel bloated.
Think I'll name this as my go to meal, as its very close to my Thai roots, food wise.
