The Pocket Rule
Everybody wants to know the secret to getting pita to puff into a full pocket. Here it is, and it’s shorter than you’d think.
Three things. That’s the whole list.
Roll it even. Same thickness edge to edge. Not thin in the middle and thick at the rim. When the dough’s even, the steam lifts the top and bottom apart in one clean sheet, and you get a pocket. Uneven dough gives you a partial puff or a flat one.
Get the surface hot. Truly hot, not medium. A drop of water should dance and vanish off the pan before the dough ever touches it. The puff is steam happening fast, and steam needs heat. A lukewarm pan just dries the dough out.
Go light on the flour. Too much bench flour is the quiet pocket killer. It sits between the top and bottom layers and keeps them from sealing, so the steam leaks out instead of building. Roll on a light dusting and brush the excess off before it hits the pan.
That’s it. Even dough, hot pan, light flour. Nail those three and the pocket takes care of itself.
And if one still comes out flat? It’s good flatbread. Fold it around your lunch and roll the next one hotter.
