How to see what callbacks the AI has scheduled?

I noticed the AI has a feature where it can self-schedule a call back with a user. But, this doesn't seem to be 100% consistent. How can I access the database of all scheduled callbacks?

For example:

I have a quote follow-up AI assistant. Some users ask the AI to call back on Saturday. The AI then self-schedules to call them on the Saturday. How can I see how the AI is doing this, and what callbacks it has scheduled in the system?
