High Protein Green Chile Enchiladas
Made this for dinner last night and it was just too good not to share! I used carb balance tortillas, filled the enchiladas with chicken, green chiles, Greek yogurt, and freshly grated Monterey Jack cheese. The top is green chile enchiladas sauce and more cheese. 😆 This is definitely a regular meal that is easy to batch prep for the week 🙌
