@Hazem Hashem I was actually baking eight trays. You couldn’t see the other side. Yes I have a commercial convection.

Italian merangue
Hello! Getting ready to try Crystals recipe for the second time. I think I’ve over mixed this before and caused it to deflate. Any tips? Thanks! Tracey

@Hazem Hashem 244°. Interesting. My current recipe has me pouring at 239°. I haven’t seen this groups recipe yet as I’m new. Excited to see it. Cause I know a few degrees can make a big difference

@Hazem Hashem thank you. im certain this may be why the recipe ive been using is hit or miss. cause it says 239 degrees. 244 make good sense.
Macarons
Today is my third times trying out crystal recipe. Everything still looking good. Full mac today but i still need to adjust my oven temp because it seem alittle hot in oven some are crack but still a good mac. When it too cold my macaron isnt as smooth.

Mother’s Day Macrons🌸💗
These are my most recent macrons yet, I coloured them pink, filled them with white chocolate ganache & raspberry jam. Then I dipped them in white chocolate & sprinkled freeze dried raspberries on top💗🌸
