@Michael McNeley no sir. Once I have the color I like I wrap in a foil pan with 8 oz of pineapple or apple juice. This was pineapple juice plus the some of the rendered fat. Once pulled it reabsorbs all the liquid.

Thank you for the invite. A little about myself. I’m a heavy equipment operator full time, I dig mainline for an underground company here in California where we install underground utilities. I’m married and we have two boys and we keep them busy in sports all year. I’ve been cooking since I was 10, started with open fire on Santa Maria style pits and have been smoking low and slow for the past 2 years. I cook on a lone star grillz cabinet pellet smoker. I’d like to get into a stick burner but right now my schedule doesn’t allow me time to watch a fire.

@Brian Beddingfield I appreciate it. Yes an offset is definitely in my future. I have modified my lsg where I can add wood splits right above the firepot. It has closed the gap with smoke profile vs an offset and I’m using locally sourced white and red oak. I hear you on running out of space, I have the cabinet and a camp chef griddle, I’d like to add a charcoal grill so a kettle is probably in the cards 😂
