What is in your pantry?
So in 2012 I wrote a cookbook called, Pantry Basics - Cooking during hard times. The computer I was using died and the cookbook was not recoverable, good thing I printed it all. I wanted to share about the basis of this cookbook, the pantry. I am attaching a pantry list. I need some feedback here. Please review it and let me know if you have all these items in your pantry, or what you might have different that is a basic pantry item. Blessings!

@Laura Lane I wouldn't call it hot. Shwarma is actually a middle eastern dish, made with grilled chicken, roasted potatoes and fried rice. I think the seasoning is what they put on the chicken, but don't quote me on that. My dad found a restaurant that serves Shwarma and it has been a family favourite ever since. Homemade Salsa
I had picked tomatoes and fresh Jalapeño’s from the garden and they were sitting on counter. I looked at them and thought, what can I make with what I have?? I had everything but fresh garlic cloves, so I made salsa. I had a bunch of small tomatoes (10-13) 2 small onions peeled and cut in half 4-6 cloves garlic (didn’t have any so I just sprinkled tomatoes with garlic powder) Jalepeno I had 8 so I cut in half and mostly seeded them. Added olive oil and then mixed well. Make sure tomatoes are skin side up. Onions are skin side down and jalapeños are skin side down. Place in 425 oven for 30 minutes-mix 1/2 way Take out and cool till you can remove tomato skins. Put all this into blender. Add salt and pepper Add cumin More garlic salt Juice of 1 lime 1/4 cup of fresh cilantro - I just cut a bunch 😋 Blend to your desired consistency. I like it a little chunky. I put in a 1 quart jar Refrigerate and those flavors meld Mmmm 😋 Enjoy (Mine had a bit of heat. Not hot but lots of flavor. )

Question
So I have a few allergies that can be very restricting for my diet and I'm looking for some new things to try out (especially with chicken). I'm allergic to dairy (butter, cheese, milk, cream etc.), eggs and nuts. I was wondering if anyone had some good recipes that didn't include these ingredients. Hope everyone had a great weekend! 😊

Old-Fashioned Cocoa from Scratch
Laura Lane 1/2 cup Hershey’s cocoa 1 cup of white sugar 1/3 cup of cold water Enough milk to fill 3 quart saucepan Combine 1/2 cup Hershey’s cocoa and 1 cup of white sugar in a three quart saucepan using a wire whisk. I do this while the cocoa and sugar are still dry so that the cocoa will mix in nice and smooth without a bunch of lumps. Add about 1/3 cup of cold water and mix until smooth. Bring to a boil and continue to boil it for about a minute, stirring constantly. Don’t worry if it sticks to the sides, it’ll melt back into the cocoa as it heats up. Fill the pan with milk, It'll be a little more than half a gallon of milk. Stir and heat using medium heat. If you need to walk away from it, just turn it on the lowest heat. Heat to desired temperature, but do not boil. A personal note from 2014: My family just loves the rich flavor of old fashioned cocoa made from scratch. Scratch means you start with basic ingredients and go from there. I love it, because I always have the ingredients on hand. We're always ready for a cocoa fix. My kids will have the memory of Momma over the stove stirring the cocoa. They came running when they heard the scritch scritch scratch sound the whisk makes in the pan. Number Of Servings: 6 The total cost at 2025 prices are: 2.48 for 1/2 cup of cocoa .38 for 1 cup of white sugar 3.07 for 3 qts of whole milk Total is $5.93 $1.00 per serving Preparation Time: 15 minutes
