Chocolate Chip Banana Oat Treats(Snack/Healthy Breakfast Bites)
Ok, I’m sure this happens to the best of us. We buy bananas and then our lives get busy and all of a sudden they start looking like a giraffe and too mushy to eat by just peeling them. Who else does this happen to? Now, because I try personally to avoid too much bread around the holidays and in general I don’t make the summer go to of banana bread or muffins. I make my Peanut Butter Chip Banana Oat Treats(Chocolate Chip for others posted in pics) Whether or not you eat a ripe or unripe banana is not definitively healthier; the best choice depends on your health goals. Unripe bananas are higher in resistant starch, which is better for blood sugar control and gut health, while ripe bananas are easier to digest, sweeter, and have higher levels of antioxidants. Both are excellent sources of potassium, vitamin B6, and fiber. Personally in the morning it is hard for me to eat a lot so these little treats pack the nutrition I need to start off my day without tasting dry, chemically processed, overly sweet or heavy on my stomach. What You will Need: Tools-Oven Preheated 350F, Bowl,Fork, Tablespoon, 1/2 Teaspoon, 1Teaspoon, Cookie Sheet, Parchment Paper or Silicone Baking Mat. Ingredients- 2 Ripe Bananas, Quick Oats(Do Not Use Steel Cut), Pure Vanilla, Ground Cinnamon(can use stick just use a grater to make into powder) Directions:Preheat Oven 350F, In bowl mash 2 ripe peeled bananas, add 1 cup quick oats, 1/2 Tsp cinnamon, 1 Tsp Vanilla, 1/2 to 1 cup Chocolate or Peanut Butter Chips(Mix well), scoop 1 TBSP onto cookie sheet topped with parchment paper or silicone mat and scrap off using back of Tsp. The mixture will be sticky. Space evenly give about 1 inch between each treat. Bake for 20 mins. Let them cool. Can store in refrigerator in sealed container lined with paper towel for 5 days or make a bunch and store up to 3 months in freezer. Serving size 3 treats. Enjoy!! Tip: If you buy bananas in bulk peel ripe bananas and freeze so you can make these in the future or for banana icecream, smoothies and more.
