Adding and removing colours

Hi, I'm new to colourwork and was wondering about adding and removing colours as we go along. I see in the pattern it says to cut colours as we finish a section with them. Is there a reason for this rather than catching a float vertically? I'm mostly asking as I'm not a fan of weaving in ends! And on that topic, with colourwork, should we tie off strands at all or does weaving in the ends secure the work enough?
